Share a Plate - Blinis

Ingredients:
Blini
3/4 cup self raising wholemeal flour
3/4 cup milk
1 tbsp natural yoghurt
1 small egg
salt (savoury) or sugar (sweet)
10g butter
Topping (savoury):
3 tbsp smooth ricotta
1 tbsp mayonnaise
1 stalk parsley
and 1 of:

5 slices smoked salmon [150 g]

6 slices spicy salami
-
6 cooked prawns
-
6 cheery tomatoes & a baby cucumber
Topping (sweet):
3 tbsp smooth ricotta
1 tbsp yoghurt
1 pinch sugar
1 stalk parsley
and 1 of:
-
2 ripe peaches
-
6 strawberries
-
1 small ripe mango
Method:
1. Place flour in a medium bowl and make a well in the centre.
2. Crack the egg into the well and whisk, slowly adding more milk to make a thick batter.
3. Add a pinch of salt or sugar (depending on if you're using sweet or savoury toppings) and allow to rest.
4. Chop the main topping into small pieces.
5. In a small bowl, mix the ricotta with the mayonnaise if using a savoury topping, or mix the ricotta with the yoghurt and a pinch of sugar if using a sweet topping.
6. Heat a small frying pan and allow a small amount of butter to melt.
7. Add a spoonful of batter in a small circle (6-8cm diameter).
8. Add more spoonfuls depending on the size of your frying pan. The recipe should make 10-15 blinis.
9. When the blinis are cooked, becoming firm, flip them over and briefly fry the other side.
10. Spread each with ricotta mix and add a small amount of toppings.
11. Garnish with parsley leaves.
